Making Macaroons!
Like most everyone welcoming in the new year, I made the resolution to get back in shape. That doesn’t bode well with my recent baking obsession so…I must compromise.
After searching for “healthy cookie recipes” I came across this delicious Coconut Cookie Recipe from Chocolate Covered Katie.
It’s just a few simple ingredients & can be adjusted to meet vegan, gluten-free & paleo/keto dietary lifestyles. If you’re into that sort of thing.
I made both, the classic & the mocha coconut macaroons & they are just the perfect mix of sweet, chewy, & crunchy. Go ahead, give it a try…
Mocha Macaroons
-1 tbsp flour of choice or protein powder
-1 tbsp cocoa powder
-1 tsp instant coffee powder, decaf or regular
-1 cup shredded, unsweetened coconut (not low-fat)
-1/2 cup plus 2 tbsp milk of choice or canned coconut milk
-3 tbsp agave or pure maple syrup
-pinch stevia or 1 more tbsp agave or maple syrup
-1/4 tsp pure vanilla extract
-just over 1/16 tsp salt
-melted chocolate chips or healthy chocolate sauce, for dipping
Classic Macaroons
-1 cup unsweetened shredded coconut
-1 tbsp almond meal or flour of choice
-1/2 cup + 1 tbsp milk of choice or coconut milk
-just over 1/16 tsp salt
-3 1/2 tbsp pure maple syrup, honey, or agave (a keto option is listed in post)
-1/4 tsp pure vanilla or coconut extract
