Homemade Salmon Avocado Poke Bowl

Now that my homemade salmon avocado poke bowls have received 2 thumbs up from my guys, I wanted to share the recipe. I hope that it inspires you to make it & that you love it as much as we do!

But first, what is a poke bowl? Pronounced po-kay, it’s a Hawaiian dish of diced fresh fish served on top of rice with fresh fixings like avocado, radishes & cucumbers. The fish is usually tuna, but salmon (which I prefer) & other sashimi-quality fish can be used. The diced fish gets tossed with a simple dressing/marinade of soy sauce, rice vinegar & sesame oil, which makes it oh so delish! And now for my homemade recipe but make sure to buy high quality salmon (tuna) since you’ll be eating it raw. In Japanese supermarkets, fish is labeled “sashimi” when it’s safe to eat raw. Otherwise, ask your fishmonger about the quality of the fish before buying. I’ve been using salmon & tuna from Trader Joe’s & the Asian Supermarket here in Philadelphia but any sushi-grade fish will do. Eat your poke bowl out Poi Dog!

Ingredients:

  • Rice
  • Sushi-grade salmon (or Ahi Tuna)
  • Rice vinegar
  • Soy sauce
  • Sesame oil
  • Avocado, thinly sliced
  • Cucumber, halved lengthwise & thinly sliced
  • Ginger
  • Wasabi (my boys like it spicy)
  • Green onion, thinly sliced
  • 5 small sheets nori
  • ¼ teaspoon toasted sesame seeds
  • ¼ teaspoon black sesame seeds

Preparation:
Rice – Get as fancy or as simple as you like. I go simple with Trader Joe’s steamed rice that takes 2 minutes in the microwave. If you’re a purist, try this sushi rice & prep the rest of the ingredients while it cooks.

Salmon – Gently pat the salmon all over to make sure there are no bones still lodged in the fillet; if there are, use needle-nosed pliers to remove them. Cut the salmon into 1/2-inch cubes. Add the salmon into a medium bowl & set aside.

Dressing/Marinade – In a small bowl, stir together the soy sauce, rice vinegar, sesame oil, wasabi, (sugar & garlic powder for taste). The garlic powder & sugar will not dissolve completely, but that’s fine.

Using a large spoon or a rubber spatula, gently mix the salmon & the dressing/marinade.

Serve – Divide the rice between each bowl & then add the salmon. Top with your favorite veggies like sliced scallions, cucumber, radishes, diced avocado, red pepper flakes, & any other topic you like.

Pour yourself a glass of chilled Japanese Sake & enjoy immediately!

If you can’t eat raw poke for health reasons, grill the salmon THEN, dice it. Just as delicious as the original.
